Vegan Fried Rice

Transform leftover rice into a flavorful and satisfying vegan dish with this quick and easy Vegan Fried Rice recipe. Packed with colorful vegetables and aromatic spices, it's a delicious way to enjoy a plant-based twist on a classic favorite.

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 3 cups mixed vegetables (e.g., broccoli florets, carrots, peas, bell peppers)
  • 1/2 cup dried shiitake mushrooms, thinly sliced
  • 3 cups cooked white or brown rice (chilled)
  • 2 tablespoons CÓCOES Organic Coconut Flower Aminos
  • 1/2 teaspoon white pepper powder
  • 3 green onions, chopped
  1. In a large wok or skillet, heat the vegetable oil over medium-high heat.
  2. Add the minced garlic and onion, and cook for 30 seconds until fragrant.
  3. Stir in the mixed vegetables and stir-fry for 3-5 minutes until just crisp-tender.
  4. Add the sliced shiitake mushrooms and cook for another minute.
  5. Add the chilled cooked rice and break up any clumps with a spatula. Stir-fry with the vegetables for 2-3 minutes.
  6. Drizzle the rice with CÓCOES Aminos and stir well to coat evenly. Season with white pepper powder.
  7. Garnish with chopped green onions and stir them in before serving.
