Vegan Fried Rice
Transform leftover rice into a flavorful and satisfying vegan dish with this quick and easy Vegan Fried Rice recipe. Packed with colorful vegetables and aromatic spices, it's a delicious way to enjoy a plant-based twist on a classic favorite.
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/2 onion, finely chopped
- 3 cups mixed vegetables (e.g., broccoli florets, carrots, peas, bell peppers)
- 1/2 cup dried shiitake mushrooms, thinly sliced
- 3 cups cooked white or brown rice (chilled)
- 2 tablespoons CÓCOES Organic Coconut Flower Aminos
- 1/2 teaspoon white pepper powder
- 3 green onions, chopped
- In a large wok or skillet, heat the vegetable oil over medium-high heat.
- Add the minced garlic and onion, and cook for 30 seconds until fragrant.
- Stir in the mixed vegetables and stir-fry for 3-5 minutes until just crisp-tender.
- Add the sliced shiitake mushrooms and cook for another minute.
