Roasted Sweet Potato
Roasted sweet potatoes are a delicious and nutritious dish that involves baking sweet potato chunks until they become caramelized and tender. Roasted sweet potatoes can be enjoyed as a side dish, snack, or incorporated into salads, bowls, and various other recipes.
- 2 large sweet potatoes
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons CÓCOES Organic Coconut Flower Syrup
Optional Toppings:
- Chopped fresh herbs (e.g., parsley, cilantro, thyme)
- Crumbled feta cheese
- Chopped nuts (e.g., walnuts, pecans, almonds)
- Plain Greek yogurt (for a savory-sweet combo)
- Heat your oven to 400°F (200°C). Wash and peel the sweet potatoes, then cut them into wedges of roughly equal size.
- In a large bowl, toss the sweet potato wedges with olive oil, salt, and black pepper until evenly coated.
- Arrange the wedges in a single layer on a baking sheet. Roast them in the preheated oven for 20-25 minutes, or until tender and lightly browned.
