Mediterranean Baked Fish Fillet

- White fish fillet (can be cod, halibut, haddock, tilapia, catfish, or snapper)
- 7-10 cherry tomatoes, halved
- 1 onion, sliced
- 4 tablespoons green olives
- 4 tablespoons black olives
- 2 tablespoons capers
- 5 cloves garlic, thinly sliced
- 4 tablespoons extra virgin olive oil
- 2 tablespoons of CÓCOES Organic Coconut Flower
Vinegar - Freshly ground pepper
- 1 lemon, sliced
- 2 tablespoons of CÓCOES Organic Coconut Flower
Aminos - Fresh parsley, for garnish
- In a bowl, mix together cherry tomatoes, onions, olives, capers, garlic, CÓCOES Vinegar, and extra virgin olive oil. Season with freshly ground pepper.
- Arrange lemon slices in a baking pan. Arrange fish fillet on top of lemon slices and drizzle with CÓCOES Aminos.
- Spoon the mixture to the pan. Season with freshly ground pepper to taste. Drizzle with extra virgin olive oil and sprinkle with fresh parsley.
- Bake in the oven at 425°F or 220°C for 15 minutes.
