Mediterranean Baked Fish Fillet

  • White fish fillet (can be cod, halibut, haddock, tilapia, catfish, or snapper)
  • 7-10 cherry tomatoes, halved
  • 1 onion, sliced
  • 4 tablespoons green olives
  • 4 tablespoons black olives
  • 2 tablespoons capers
  • 5 cloves garlic, thinly sliced
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons of CÓCOES Organic Coconut Flower
    Vinegar
  • Freshly ground pepper
  • 1 lemon, sliced
  • 2 tablespoons of CÓCOES Organic Coconut Flower
    Aminos
  • Fresh parsley, for garnish
  1. In a bowl, mix together cherry tomatoes, onions, olives, capers, garlic, CÓCOES Vinegar, and extra virgin olive oil. Season with freshly ground pepper.
  2. Arrange lemon slices in a baking pan. Arrange fish fillet on top of lemon slices and drizzle with CÓCOES Aminos.
  3. Spoon the mixture to the pan. Season with freshly ground pepper to taste. Drizzle with extra virgin olive oil and sprinkle with fresh parsley.
  4. Bake in the oven at 425°F or 220°C for 15 minutes.
  5. Serve immediately for optimal taste.
