CÓCOES Vinegar Slaw
Bright, crisp, and full of flavor. This slaw uses CÓCOES Vinegar to bring a clean, zesty lift to fresh vegetables. Light, refreshing, and great on the side of any meal.
For the dressing:
- 2 tablespoons CÓCOES Vinegar
- 1 to 2 tablespoons CÓCOES Dark Syrup
- 1/2 tablespoon Dijon or whole-grain mustard
- 1/4 teaspoon freshly ground black pepper, plus more as needed
- 1/2 tablespoon olive oil
For the slaw base:
- 3 cups finely shredded cabbage (green, red, or a mix; about ½ medium head)
- ½ cups medium carrots, peeled and grated
- 3-4 scallions, thinly sliced
- In a large bowl, whisk together CÓCOES Vinegar, CÓCOES Dark Syrup, celery seeds, and black pepper.
- While whisking, slowly drizzle in extra-virgin olive oil until fully incorporated. Adjust sweetness with more COCOES Dark Syrup, if desired.
- Add the shredded cabbage, grated carrots, and sliced scallions. Toss well to coat.
- Season with additional black pepper to taste.
