A fresh tropical take on grilled chicken. The mix of orange marmalade, COCOES Aminos Lite, and sweet pineapple creates a light, flavorful dish that’s perfect for sunny days and shared meals.
          
        
        
          
            - 2 tablespoons COCOES Aminos Lite 
- 2 tablespoons orange marmalade 
- 3 cloves garlic, crushed 
- 1 tablespoon grated ginger
- 500 g chicken breast fillets, cut into 4cm cubes 
- 300 g fresh pineapple peeled and cut into large 4cm cubes 
- 1 large red capsicum, cut into 4cm chunks 
- 8 x 24cm long thick bamboo skewers, soaked in water 
- 10 pcs cherry tomatoes 
- Lime wedges and coriander to serve 
Basting sauce: 
- 2 tablespoons COCOES Aminos Lite 
- 2 tablespoons vegetable oil 
 
          
            - Mix orange marmalade, COCOES Aminos Lite, garlic, and ginger. Marinate chicken for at least 30
 minutes.
- Thread chicken, capsicum, pineapple, and cherry tomatoes onto skewers 
- Grill over medium-high heat 10–12 mins, turning. Brush with basting sauce, 
- Serve with extra marmalade, lime wedges, and coriander.
